Pisto and Eggs

I seem to be on an egg theme this week.

Went out to dinner at a local cafe/restaurant (a few tables and a bar).  Among the dishes offered was Pisto and Eggs (well, one egg).

That’s a nice runny fried egg on top of a dish of pisto (see prior post here).   We’re not afraid of less-than-hard-cooked eggs here.

Practically vegetarian – of a sort.

The "trick" with this dish is that each vegetable is cooked/braised separately to its indvidual point of perfection and then the assorted ingredients are mixed together for a final blending of several distinct flavours. It's really quite an interesting (French) technique - - but makes for a lot of dirty dishes.
